Fact # 19: The smaller the pepper, the hotter is it
As a general rule, the smaller the pepper the hotter it is due to the capsaicin per pepper ratio. The color of the chilli is no indication of its spiciness.
Capsaicin concentration isn't determined by size. There is a relationship between the amount of placental (white) tissue on the inside and capsaicin concentration but aside from that it's all variety and influenced by growing conditions.
I'll bet the fact that flames are coming out of it is a tip-off.

ReplyDeleteMost 'super hot' peppers (Bhut Jolokia, Trinidad Scorpion, 7 Pot, etc) are often very large.
